It reminds me the portuguese' 'sonhos' made on christmas. 'Port Wine Puffs' is an easy recipe of very light and fluffy sweets, made with Port wine and cream cheese. Sprinkle with icing sugar and cinnamon powder and dump it in lemon sauce!
For the puffs: 1 litre of oil - 100 gr cream cheese (I used Philadelphia) - 1 tablespoon of Port wine - 1 egg - 1/2 cup of plain flour - 1 tablespoon of sugar - 1 tablespoon baking powder - 1 teaspoon of orange zest - icing sugar and cinnamon powder, as needed
For the lemon sauce: 50 ml water - 3 tablespoon of sugar - 2 lemon peels
While you prepare the puffs, heat the oil in a large pan over a high heat. To make the batter, mix the cream cheese and egg together in a bowl. Add the Port wine, flour, sugar, baking powder and orange zest. When the oil is hot spoon the mixture and let it gently slide over to the oil. The dough should come up and as soon as one side is brownish, turn it to the other side. Transfer the puffs to a plate with absorbent paper. Sprinkle with icing sugar and cinnamon powder.
Meanwhile make the sauce. Put the water, sugar and lemon peels into a pan over high heat for 2 minutes. Turn the heat down to medium and let the sugar caramelize for 5 minutes. Serve the 'Port wine Puffs' with the lemon sauce!
