Noodles with Cod and Sautéed Vegetables

I came up with this recipe at a park in London thinking it as a starter. Once I tried it in Portugal soon it became a main dish. It is a fusion of the Chinese noodles with Codfish and vegetables, dressed with soy sauce. I used rice noodles but egg noodles would work too.

For 4 people as main course: 600 gr boiled cod, roughly shredded - 400 gr mixed vegetables such chayote, turnip, carrot, boiled beans, curly kale, chilli, broccoli, soya beans, finely chopped - 5 rings of pork sausage or pepperoni (optional), finely chopped - black olives as needed, sliced - 1 pack of dry noodles 400 gr - 1 1/2 glass of soy sauce - 4 garlic cloves, smashed with a knife - 2 bay leaves - 4 tablespoon sesame seeds


Note: If using chilli, take the seeds out otherwise the dish will be very spicy.

Pre-heat water in a large pot to boil the noodles.

In a large pan, brown the garlic with 6 tablespoons of olive oil then sautee the codfish with the bay leaves on medium heat. When the cod becomes golden, remove it from the pan and reserve it (throw away the bay leaves). In the same pan sautee the sausage, the vegetables and the olives, drizzling olive oil if needed. When they are cooked and crispy, add the codfish and stirr frequently on low heat.

Meanwhile put the noodles into the large pot of boiling water and cook as instructed on the package. Then drain the noodles into a sieve and hold under cold running water. Add the noodles into the pan with the cod and vegetables. Pour in the soy sauce and simmer gently for 1 minute. Before serving sprinkle with roasted sesame seeds (roast it in a pan until the seeds become brownish).
